Ingredients
2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
½ tsp salt
½ cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
½ cup buttermilk
2 cups apples, peeled and diced (about 2 medium apples)
½ cup pecans, chopped
¼ cup brown sugar (for topping)
Directions
Preheat Oven & Prepare Pan:
Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
Mix Dry Ingredients:
In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
Cream Butter & Sugar:
In a large bowl, beat the softened butter and granulated sugar until light and fluffy.
Add the eggs one at a time, then stir in the vanilla extract and buttermilk until fully combined.
Combine Wet and Dry Ingredients:
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.
Fold in Apples & Pecans:
Gently fold in the diced apples and chopped pecans until evenly distributed in the batter.
Bake:
Pour the batter into the prepared loaf pan and sprinkle the brown sugar on top.
Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
Cool:
Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
