A savory and satisfying dish filled with creamy ricotta, fresh spinach, and flaky crust—perfect for brunch, lunch, or a light dinner!

Ingredients:

1 9-inch pie crust (store-bought or homemade)

1 tbsp olive oil

1 small onion, finely chopped

2 cups fresh spinach, chopped

1 cup ricotta cheese

½ cup grated Parmesan cheese

½ cup shredded mozzarella cheese

3 large eggs

½ cup milk

¼ tsp salt

¼ tsp black pepper

⅛ tsp ground nutmeg (optional)

Instructions:

Preheat the Oven:

Preheat your oven to 375°F (190°C). Place the pie crust into a 9-inch pie dish and set aside.

Sauté the Vegetables:

Heat olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add the spinach and cook until wilted. Remove from heat and let cool slightly.

Prepare the Filling:

In a large mixing bowl, whisk together the ricotta cheese, Parmesan, mozzarella, eggs, milk, salt, pepper, and nutmeg (if using). Stir in the sautéed spinach and onion mixture until well combined.

Fill and Bake:

Pour the mixture into the prepared pie crust, smoothing out the top. Bake in the preheated oven for 35–40 minutes, or until the center is set and the top is lightly golden.

Cool and Serve:

Let the quiche cool for 5–10 minutes before slicing. Serve warm or at room temperature.
