Ingredients:
- 1 cup all-purpose flour
- ½ cup unsweetened cocoa powder
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup buttermilk
- 12 whole Oreos (for bottom of cupcake liners)
- 6 crushed Oreos (for batter)
For the Oreo Frosting:
- ½ cup unsalted butter, softened
- 4 oz cream cheese, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 6 crushed Oreos
Instructions:
Preheat and Prepare:
Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners and place one whole Oreo at the bottom of each liner.
Make the Batter:
In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. In a separate large bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
Combine Wet and Dry:
Add the dry ingredients to the wet in batches, alternating with the buttermilk. Mix just until combined. Gently fold in the crushed Oreos.
Bake:
Spoon the batter over the Oreos in the cupcake liners, filling each about ¾ full. Bake for 18–20 minutes, or until a toothpick comes out clean. Let cool completely.
Make the Frosting:
Beat the butter and cream cheese together until smooth. Add the powdered sugar and vanilla extract and mix until fluffy. Fold in the crushed Oreos.
Frost and Serve:
Pipe or spread the frosting over the cooled cupcakes. Garnish with mini Oreos or Oreo crumbs if desired.
