Soft, chewy oatmeal raisin bars topped with a creamy, spiced maple cinnamon frosting — the perfect comforting treat!

📋 Ingredients:

For the Cookie Bars:

1½ cups all-purpose flour

1 teaspoon baking soda

¾ teaspoon ground cinnamon

½ teaspoon fine salt

¾ cup (1½ sticks) unsalted butter, room temperature

¾ cup packed light brown sugar

2 large eggs, room temperature

2 teaspoons pure vanilla extract

2 cups quick-cooking oats

1 cup raisins

For the Maple Cinnamon Frosting:

½ cup (1 stick) unsalted butter, room temperature

1½ cups powdered sugar

1 tablespoon pure maple syrup

1–2 tablespoons heavy cream, room temperature

½ teaspoon ground cinnamon

¼ teaspoon maple extract (optional, for extra flavor)

📝 Instructions:

1. Prepare the Cookie Bars:

Preheat the Oven:

Set your oven to 350°F (175°C).

Grease and line a 9×9-inch baking pan with parchment paper, leaving overhang for easy removal.

Mix the Dry Ingredients:

In a medium bowl, whisk together flour, baking soda, cinnamon, and salt. Set aside.

Cream Butter and Sugar:

In a large mixing bowl, use an electric mixer to beat the softened butter and brown sugar until light and fluffy (about 2-3 minutes).

Scrape down the sides of the bowl as needed.

Add Eggs and Vanilla:

Beat in the eggs, one at a time, ensuring each is fully incorporated.

Stir in the vanilla extract.

Combine with Dry Ingredients:

Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.

Fold in the oats and raisins using a spatula. The dough will be thick.

Press and Bake:

Spread the thick dough evenly into the prepared baking pan.

Optionally, sprinkle a few extra raisins on top for decoration.

Bake for 18-20 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.

Cool:

Allow the bars to cool in the pan for 5-10 minutes, then use the parchment overhang to lift them out onto a wire rack to cool completely.

2. Make the Maple Cinnamon Frosting:

Beat the Butter:

In a medium bowl, beat the softened butter until smooth and creamy.

Add Sweeteners and Flavor:

Gradually add the powdered sugar, mixing until fully combined.

Stir in the maple syrup, heavy cream (start with 1 tablespoon), cinnamon, and maple extract (optional).

If the frosting is too thick, add a little more cream until you reach a smooth, spreadable consistency.

3. Frost and Serve:

Once the cookie bars have cooled completely, spread the maple cinnamon frosting evenly over the top.

Cut the bars into squares or rectangles for serving.

Enjoy the warm, comforting flavors of these Oatmeal Raisin Cookie Bars!
