Ingredients

→ For the Chicken:

  • 1½ lbs thin-sliced, boneless, skinless chicken breasts (about 6)
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon crushed red pepper flakes
  • ½ teaspoon dried oregano
  • 1½ teaspoons paprika
  • 1½ teaspoons ground cumin

→ For the Cheese Sauce:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1½ cups shredded Mexican cheese blend
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper, to taste

Instructions

Season and Cook the Chicken:
In a small bowl, mix the chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, and cumin. Rub the seasoning mix evenly over both sides of the chicken breasts. Heat a skillet over medium-high heat and cook the chicken for 4-5 minutes per side, or until golden brown and fully cooked. Remove from heat and set aside.

Prepare the Cheese Sauce:
In the same skillet, melt the butter over medium heat. Stir in the flour and cook for 1 minute. Slowly whisk in the milk, stirring constantly until smooth. Reduce the heat to low and add the shredded cheese, garlic powder, and onion powder. Stir until melted and creamy. Season with salt and pepper to taste.

Assemble and Serve:
Place the cooked chicken on a serving plate and generously spoon the cheese sauce over the top. Garnish with fresh cilantro or sliced jalapeños for extra flavor. Serve with rice, tortillas, or a side of roasted veggies. Enjoy!
