
Loaded Baked Potato and Bacon Crockpot Casserole
A rich, cheesy, and comforting dish packed with crispy bacon, tender potatoes, and melted cheese—all slow-cooked to perfection! Perfect for busy days or cozy family dinners.
Ingredients:
2 lbs potatoes, peeled and diced
1 lb bacon, cooked and crumbled
2 cups shredded cheddar cheese
1 cup sour cream
1 cup heavy cream
½ cup chopped green onions
1 tsp garlic powder
1 tsp onion powder
½ tsp salt
½ tsp black pepper
Instructions:
Prepare the Ingredients:
Cook the bacon until crispy, then crumble it into small pieces. Peel and dice the potatoes into bite-sized cubes.
Layer in the Crockpot:
Grease the crockpot and add half of the diced potatoes. Sprinkle with half of the crumbled bacon, shredded cheddar cheese, and chopped green onions. Repeat the layers with the remaining ingredients.
Mix the Sauce:
In a bowl, whisk together sour cream, heavy cream, garlic powder, onion powder, salt, and black pepper. Pour the mixture evenly over the potatoes and bacon.
Slow Cook:
Cover and cook on low for 6-7 hours or high for 3-4 hours, until the potatoes are tender and the cheese is melted.
Serve:
