🛒 Ingredients
For the Cookies:
2 ¾ cups flour
1 teaspoon baking soda
½ teaspoon baking powder
1 cup butter, softened
1 ¼ cups sugar
1 egg
1 teaspoon vanilla extract
For the Lemon Curd Filling:
6 tablespoons butter, softened
1 cup sugar
2 whole eggs and 2 egg yolks
⅔ cup lemon juice
For the Topping:
Zest from 1 lemon
2 tablespoons powdered sugar

1️⃣ Make the Cookies
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together flour, baking soda, and baking powder.
In a large bowl, cream butter and sugar until light and fluffy.
Beat in egg and vanilla extract until combined.
Gradually add dry ingredients, mixing until a soft dough forms.
Roll dough into 1-inch balls and place 2 inches apart on the baking sheet.
Flatten each ball slightly with your hand.
Bake 8–10 minutes, until edges are lightly golden. Cool completely on a wire rack.
2️⃣ Prepare the Lemon Curd Filling
In a medium saucepan, cream butter and sugar over medium heat.
Add eggs, yolks, and lemon juice, whisking constantly.
Cook for 8–10 minutes, until mixture thickens and coats the back of a spoon.
Remove from heat and strain through a fine sieve to remove lumps.
Let cool completely.
3️⃣ Assemble the Cookie Sandwiches
Spread a generous layer of lemon curd on the flat side of a cookie.
Top with another cookie to create a sandwich. Repeat for all cookies.
4️⃣ Garnish and Serve
Dust tops with powdered sugar and lemon zest for a bright, fresh finish.
