
Lemon Blueberry Loaf 🍋🫐
A bright and flavorful loaf bursting with juicy blueberries and zesty lemon! This soft, moist bread is perfect for breakfast, brunch, or an afternoon treat.
Ingredients:
- 1½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- ½ cup unsalted butter, softened
- ¾ cup sugar
- 2 eggs
- 1 tbsp lemon zest
- 2 tbsp lemon juice
- ½ cup milk
- 1 cup fresh blueberries (tossed in 1 tbsp flour)
For the Lemon Glaze:
- ½ cup powdered sugar
- 2 tbsp lemon juice
Instructions:
Preheat & Prepare:
Preheat your oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
Make the Batter:
In a bowl, whisk together flour, baking powder, and salt. In a separate large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well. Stir in lemon zest and lemon juice.
Combine Wet & Dry Ingredients:
Alternately add the flour mixture and milk to the wet ingredients, mixing until just combined. Gently fold in the floured blueberries to prevent sinking.
Bake:
Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean. Let cool before removing from the pan.
Prepare the Glaze:
Whisk powdered sugar and lemon juice until smooth. Drizzle over the cooled loaf.
