Bright, tangy, and refreshingly sweet—this Key West Lime Pie is a tropical escape in every bite! With a creamy citrus filling and a buttery graham cracker crust, it’s the perfect dessert for sunny days or anytime you crave a slice of paradise. 🌴🌞

Ingredients:

  • 1½ cups graham cracker crumbs
  • â…“ cup granulated sugar
  • 6 tbsp unsalted butter, melted
  • 4 large egg yolks
  • 1 can (14 oz) sweetened condensed milk
  • ½ cup Key lime juice (fresh or bottled)
  • 1 tbsp lime zest

Instructions:

Prepare the Crust:
Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake for 8-10 minutes, then set aside to cool slightly.

Make the Filling:
In a mixing bowl, whisk the egg yolks until slightly thickened. Add the sweetened condensed milk, Key lime juice, and lime zest. Whisk until smooth and creamy.

Assemble and Bake:
Pour the filling into the cooled crust and smooth the top. Bake for 15-17 minutes, just until the filling is set but still slightly jiggly in the center.

Chill and Serve:
Cool the pie at room temperature for 30 minutes, then refrigerate for at least 3 hours (or overnight) until fully chilled and set. Garnish with whipped cream and extra lime zest if desired.
