Ingredients:
For the Chicken & Marinade:
1 ½ lbs boneless, skinless chicken thighs (or breasts), cut into chunks
⅓ cup soy sauce (low sodium preferred)

2 tablespoons honey
1 tablespoon rice vinegar
2 garlic cloves, minced
1 teaspoon freshly grated ginger (or ½ tsp ground ginger)

1 green bell pepper, chopped

Instructions:
- Marinate the Chicken:
In a large bowl, whisk together soy sauce, pineapple juice, honey, rice vinegar, garlic, ginger, sesame oil, salt, and pepper.
Add chicken pieces and toss to coat well.
Cover and marinate in the fridge for at least 30 minutes (or overnight for maximum flavor).
