Greek Almond Cake (Amygdalopita) 🍰

A deliciously moist and fragrant Greek almond cake made with simple ingredients and a touch of citrus! This traditional treat has a light, nutty texture and pairs perfectly with a cup of coffee or tea. Drizzle with honey or dust with powdered sugar for an extra sweet finish!

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 1 cup all-purpose flour
  • 1 cup finely ground almonds
  • 1½ tsp baking powder
  • ½ tsp salt
  • Zest of 1 lemon
  • ½ cup milk

For the Syrup:

  • ½ cup water
  • ½ cup honey
  • ¼ cup sugar
  • Juice of ½ lemon

Instructions:

Preheat and Prepare:
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

Make the Batter:
In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla and almond extracts.

Combine Dry Ingredients:
In a separate bowl, whisk together the flour, ground almonds, baking powder, salt, and lemon zest. Gradually fold the dry ingredients into the wet mixture, alternating with the milk, until fully incorporated.

Bake the Cake:
Pour the batter into the prepared pan and spread evenly. Bake for 35-40 minutes, or until golden brown and a toothpick inserted in the center comes out clean.

Prepare the Syrup:
While the cake is baking, combine water, honey, sugar, and lemon juice in a saucepan over medium heat. Stir until the sugar dissolves and bring to a gentle simmer for about 5 minutes. Remove from heat.

Soak and Serve:
Once the cake is done, let it cool slightly. While still warm, poke small holes in the cake and slowly drizzle the syrup over the top, allowing it to absorb fully. Let the cake rest for at least 15 minutes before slicing.
