Ingredients
For the Pork Chops:
4 bone-in pork chops (about ½-inch thick)
1 cup all-purpose flour
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
½ tsp salt
½ tsp black pepper
2 large eggs
¼ cup milk
Vegetable oil (for frying)
For the Bacon Gravy:
4 slices bacon, chopped
3 tbsp bacon grease (reserved from cooked bacon)
3 tbsp all-purpose flour
2 cups whole milk
Salt and pepper, to taste
Instructions
Prep the Pork Chops:
In a shallow dish, combine flour, paprika, garlic powder, onion powder, salt, and black pepper.
In a separate bowl, whisk together the eggs and milk.
Dredge each pork chop in the flour mixture → dip into the egg mixture → dredge again in the flour. Set aside.
Fry the Pork Chops:
In a large skillet, heat about ¼ inch of vegetable oil over medium-high heat.
Fry pork chops for 3–4 minutes per side or until golden brown and internal temp reaches 145°F (63°C).
Transfer to a paper towel-lined plate to drain excess oil.
Make the Bacon Gravy:
In the same skillet, cook chopped bacon until crispy. Remove bacon and set aside, reserving 3 tbsp of bacon grease in the skillet.
Stir in the flour and cook for 1–2 minutes to form a roux.
Gradually whisk in the milk, stirring constantly to avoid lumps.
Bring to a simmer and cook until thickened (about 3–4 minutes). Season with salt and pepper to taste.
Stir in the cooked bacon.
Serve:
Spoon the rich bacon gravy generously over the crispy pork chops.
Serve hot with mashed potatoes, green beans, or buttermilk biscuits for a complete Southern feast.
Optional Additions & Tips:
Spicy Kick: Add a pinch of cayenne to the flour mix.
Gravy Boost: A splash of cream can make the gravy extra decadent.
Make Ahead: Fry pork chops in advance and reheat in the oven at 350°F for 10–15 minutes before serving.
