1 box scalloped potatoes (with seasoning packet)
1 lb ground beef
1 onion, finely chopped
1 can cream of potato soup
1 package turkey bacon, cooked and crumbled
1 ½ cups shredded cheese (cheddar or your favorite blend)
Directions
Prepare the Scalloped Potatoes:
Preheat oven to 375°F (190°C).
Prepare the scalloped potatoes as directed on the box using the included seasoning packet.
Spread the prepared potatoes evenly into the bottom of a greased 9×13-inch baking dish.
Cook the Beef Mixture:
In a large skillet over medium heat, cook the ground beef until browned. Drain excess grease.
Add the chopped onion and cook until softened, about 3–4 minutes.
Stir in the cream of potato soup until the mixture is well combined.
Assemble the Casserole:
Layer the beef mixture over the scalloped potatoes in the baking dish.
Sprinkle the crumbled turkey bacon over the beef layer.
Top with shredded cheese, spreading it evenly across the top.
Bake:
Cover the dish with foil and bake for 25 minutes.
Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
Serve:
