
Brownie Mix Cookies
Rich, fudgy, and incredibly easy—these cookies combine the best of both brownies and cookies for a chocolate lover’s dream!
1 box brownie mix (18-20 oz)
2 large eggs
1/2 cup vegetable oil (or melted butter for a richer taste)
Optional mix-ins:
1/2 cup chocolate chips
1/2 cup chopped nuts
1/2 cup candies (like M&Ms)
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C).
Line a baking sheet with parchment paper or lightly grease it.
Make the Dough:
In a large mixing bowl, combine:
Brownie mix
2 eggs
1/2 cup vegetable oil (or melted butter)
Stir until fully combined. The mixture will form a thick dough (similar to cookie dough, not like brownie batter).
Optional: Fold in your choice of mix-ins (chocolate chips, nuts, or candies).
Shape the Cookies:
Use a cookie scoop or spoon to drop spoonfuls of dough onto the prepared baking sheet.
Leave about 2 inches of space between each cookie.
Bake:
Bake in the preheated oven for 8-10 minutes, or until the edges are set, but the centers are still slightly soft.
Remember, the cookies will firm up as they cool.
Cool:
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
