Ingredients
For the Blackberry Balsamic Jam:
2 cups fresh blackberries
3 tablespoons balsamic vinegar
6 tablespoons sugar
2 tablespoons lemon juice
Pinch of kosher salt
For the Sandwiches:
300g (about 10.5 oz) double cream brie cheese, sliced
1 tablespoon fresh thyme, chopped
8 slices sourdough bread
Butter, as needed
Instructions
Make the Blackberry Balsamic Jam
In a saucepan over medium-high heat, combine blackberries, balsamic vinegar, sugar, lemon juice, and salt.
Bring to a boil, then reduce to a simmer.
Crush berries gently with a wooden spoon or potato masher.
Simmer 7–10 minutes, until thick and jammy.
Transfer to a bowl and let cool.
Prepare the Sandwiches
Butter one side of 4 sourdough slices and place them buttered-side-down on a heated skillet.
Top each slice with brie slices and a sprinkle of fresh thyme.
Cook until bread is golden and brie begins to melt.
Assemble and Cook
Spread a generous layer of cooled jam on the unbuttered side of the remaining 4 slices of bread.
Place each jam-covered slice on top of a brie-topped slice, buttered side up.
Carefully flip and continue cooking until both sides are golden and cheese is fully melted.
Serve
Remove from skillet, let cool slightly, then slice and serve warm.
