
Cabbage Roll Casserole Recipe
A quick, hearty, and delicious alternative to traditional cabbage rolls, this casserole is perfect for a cozy family meal.
For the Casserole:
3 tablespoons oil (olive or vegetable)
1 lb ground beef
1 sweet onion, chopped
1 orange bell pepper, seeded and chopped
3 garlic cloves, minced
1 (14 oz) can fire-roasted diced tomatoes
1/2 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
1 small head green cabbage, cored and chopped
2 cups shredded cheddar/jack cheese
Instructions:
1. Cook the Beef Mixture:
Heat 3 tablespoons of oil in a large skillet or Dutch oven over medium-high heat.
Add the ground beef, chopped onion, and chopped orange bell pepper.
Cook, stirring occasionally, until the beef is browned and the onions are translucent (about 5-7 minutes).
2. Add Seasonings:
Stir in the minced garlic and cook for an additional 1 minute until fragrant.
Add the fire-roasted diced tomatoes, smoked paprika, dried oregano, garlic powder, onion powder, salt, and pepper.
Mix well to combine all the flavors.
3. Add the Cabbage:
Spread the chopped cabbage over the beef mixture in an even layer.
Cover with a lid and let it cook for 15-20 minutes on medium heat, stirring occasionally, until the cabbage is tender.
4. Melt the Cheese:
Once the cabbage is tender, sprinkle the shredded cheddar/jack cheese over the top of the casserole.
Cover again and cook for an additional 2-3 minutes until the cheese is melted and bubbly.
5. Serve:
Scoop portions of the cheesy cabbage roll casserole onto plates.
