Ingredients:

  • 2 cups cooked chicken, shredded
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, sliced
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt and pepper, to taste
  • 1 cup sour cream
  • 1 ½ cups shredded cheddar cheese
  • 1 tbsp olive oil

Instructions:

Sauté the Veggies:
Preheat your oven to 375°F (190°C). In a large skillet, heat olive oil over medium heat. Add the sliced peppers and onion, and sauté until tender, about 5-7 minutes.

Season and Combine:
In a large bowl, mix the shredded chicken with chili powder, cumin, garlic powder, paprika, salt, pepper, and sour cream. Add the sautéed veggies and stir everything together until well combined.

Layer and Top:
Transfer the mixture to a greased 9×13 inch baking dish. Sprinkle the shredded cheddar cheese evenly over the top.

Bake:
Bake in the preheated oven for 20-25 minutes, or until the casserole is hot and bubbly with melted cheese on top.

Serve:
Let cool slightly before serving. Garnish with chopped cilantro or a squeeze of lime if desired.
