Instructions
1. Prepare the Cheesecake Filling:
In a bowl, beat the cream cheese, ¼ cup sugar, and 1 teaspoon vanilla extract until smooth and creamy. Refrigerate while making the dough.
2. Make the Cookie Dough:
In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
Add eggs and 2 teaspoons vanilla extract, mixing until combined.
Gradually stir in flour, baking soda, and salt until just combined—don’t overmix!
Fold in the chocolate chips gently.
3. Assemble the Cookies:
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
Scoop 1 tablespoon of dough, flatten it slightly.
Place 1 teaspoon of cheesecake filling in the center.
Top with another tablespoon of dough and seal the edges.
Repeat, placing cookies 2 inches apart.
4. Bake the Cookies:
