
Honey Bacon Roasted Potatoes
2 lbs baby potatoes, halved
6 slices bacon, cooked and crumbled
2 tbsp olive oil
3 tbsp honey
1 tsp garlic powder
1 tsp smoked paprika
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions:
Prepare the Potatoes:
Preheat your oven to 400°F (200°C). In a large mixing bowl, toss the halved baby potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
Roast the Potatoes:
Spread the seasoned potatoes on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the potatoes are golden and crispy.
Add the Bacon and Honey:
Remove the baking sheet from the oven. Drizzle the roasted potatoes with honey and sprinkle the crumbled bacon on top. Toss gently to coat the potatoes evenly.
Finish Roasting:
Return the potatoes to the oven and roast for an additional 5-7 minutes, allowing the honey to caramelize slightly.
Garnish and Serve:
