Ingredients:
- 1 cup almond flour
- ¼ cup coconut flour
- ¼ cup unsalted butter, melted
- 2 tbsp honey or maple syrup
- 1 egg
- 1 tsp vanilla extract
- 1 ½ cups fresh or frozen cranberries
- 2 tbsp orange juice
- 1 tbsp cornstarch
- 2–3 tbsp granulated monk fruit or preferred low-sugar sweetener
Instructions:
Preheat and Prepare Crust:
Preheat your oven to 350°F (175°C). In a mixing bowl, combine almond flour, coconut flour, melted butter, honey (or maple syrup), egg, and vanilla extract. Mix until a soft dough forms.
Press and Bake:
Press the dough evenly into the bottom of a greased or parchment-lined 8×8-inch baking dish. Bake for 10-12 minutes or until lightly golden.
Make the Cranberry Topping:
In a saucepan over medium heat, combine cranberries, orange juice, cornstarch, and monk fruit sweetener. Cook for 5–7 minutes, stirring frequently, until cranberries break down and the mixture thickens.
Assemble and Bake Again:
Spread the cranberry mixture evenly over the pre-baked crust. Return to the oven and bake for another 10-12 minutes.
Cool and Slice:
Allow the bars to cool completely before slicing into squares. Chill in the fridge for firmer bars, or enjoy slightly warm for a gooier bite!
