Ingredients:
- 4 large russet potatoes, baked
- 1 lb ground beef
- 1 packet taco seasoning
- ½ cup water
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- ½ cup salsa
- ¼ cup chopped green onions
- ¼ cup diced tomatoes
- ¼ cup sliced black olives (optional)
Instructions:
Prepare the Potatoes:
Bake the potatoes at 400°F (200°C) for about 50-60 minutes until tender. Let cool slightly, then slice each potato open and fluff the inside with a fork.
Cook the Taco Filling:
In a skillet over medium heat, cook the ground beef until browned. Drain excess fat, then stir in taco seasoning and water. Simmer for 5 minutes until thickened.
Assemble the Taco Potatoes:
Spoon the seasoned beef over each baked potato. Sprinkle with shredded cheddar cheese and let it melt.
