Ingredients:
- 1 ½ lbs flank steak or skirt steak, sliced into thin strips
- 3 bell peppers (red, yellow, green), sliced
- 1 large onion, sliced
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- ½ tsp smoked paprika
- ½ tsp oregano
- Salt and pepper, to taste
- Juice of 1 lime
- 8 small flour or corn tortillas
- Fresh cilantro, for garnish
Instructions:
Marinate the Steak:
In a bowl, mix olive oil, lime juice, garlic, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Add the steak strips and toss to coat. Let marinate for at least 30 minutes.
Sauté the Veggies:
Heat a large skillet over medium-high heat. Add a little oil, then cook the sliced bell peppers and onions until tender and slightly charred, about 5 minutes. Remove from the pan and set aside.
Cook the Steak:
In the same skillet, cook the marinated steak in batches for about 2-3 minutes per side, until nicely browned and cooked to your preferred doneness.
Assemble and Serve:
Warm the tortillas in a dry skillet or microwave. Fill each tortilla with steak and sautéed veggies. Garnish with fresh cilantro and serve with lime wedges, salsa, guacamole, or sour cream.
