Ingredients:
- 1 ½ lbs chicken breast, cut into 1-inch cubes
- ½ cup soy sauce
- ¼ cup honey
- 2 tbsp brown sugar
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 3 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tbsp cornstarch + 2 tbsp water (slurry)
- 1 cup pineapple chunks (optional)
- Sesame seeds & chopped green onions for garnish
- Wooden or metal skewers
Instructions:
Prepare the Marinade:
In a bowl, whisk together the soy sauce, honey, brown sugar, rice vinegar, sesame oil, garlic, and ginger. Reserve ¼ cup for basting later.
Marinate the Chicken:
Place the chicken cubes in a large zip-top bag or bowl. Pour the marinade over the chicken, mix well, and refrigerate for at least 30 minutes (or up to 4 hours for deeper flavor).
Make the Teriyaki Glaze:
In a small saucepan, bring the reserved marinade to a simmer. Stir in the cornstarch slurry and cook until thickened, about 2 minutes. Set aside.
Assemble the Skewers:
Thread the marinated chicken onto skewers, alternating with pineapple chunks if using.
Grill or Cook:
