Ingredients:
- 1 lb chicken breast or thighs, cooked and shredded
- 1 tbsp olive oil
- 1 onion, diced
- 3 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1-inch piece ginger, grated
- 1 tsp turmeric powder
- ½ tsp black pepper
- 1 tsp salt (or to taste)
- 6 cups chicken broth
- 1 cup spinach or kale, chopped
- 1 tbsp lemon juice
- ½ tsp cayenne pepper (optional, for extra warmth)
- Fresh parsley, for garnish
Instructions:
Sauté the Aromatics:
In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for 5 minutes until softened.
Add the Spices:
Stir in the minced garlic, grated ginger, turmeric, black pepper, and salt. Cook for 1-2 minutes until fragrant.
