Ingredients:

  • 1 lb chicken breast or thighs, cooked and shredded
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 tsp turmeric powder
  • ½ tsp black pepper
  • 1 tsp salt (or to taste)
  • 6 cups chicken broth
  • 1 cup spinach or kale, chopped
  • 1 tbsp lemon juice
  • ½ tsp cayenne pepper (optional, for extra warmth)
  • Fresh parsley, for garnish

Instructions:

Sauté the Aromatics:
In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for 5 minutes until softened.

Add the Spices:
Stir in the minced garlic, grated ginger, turmeric, black pepper, and salt. Cook for 1-2 minutes until fragrant.

Simmer the Soup:
Pour in the chicken broth and bring to a gentle boil. Reduce the heat and let it simmer for 15 minutes to allow the flavors to blend.

Add Chicken & Greens:
Stir in the shredded chicken, spinach (or kale), and lemon juice. Let it simmer for another 5 minutes until the greens wilt.
