A hearty, flavorful dish packed with seasoned beef, beans, cheese, and a golden cornbread topping—perfect for a comforting family meal!

Ingredients:

For the Beef Mixture:

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (10 oz) can Rotel diced tomatoes with green chilies, undrained
  • 1 cup shredded cheddar cheese
  • 1 packet taco seasoning
  • ½ tsp salt
  • ½ tsp black pepper

For the Cornbread Topping:

  • 1 (8.5 oz) box cornbread mix
  • ½ cup milk
  • 1 egg
  • 2 tbsp melted butter

Instructions:

Cook the Beef Mixture:
In a large skillet over medium heat, cook the ground beef with diced onion and garlic until browned. Drain any excess fat. Stir in taco seasoning, salt, pepper, black beans, corn, and Rotel tomatoes. Simmer for 5 minutes, then remove from heat and mix in the shredded cheddar cheese.

Prepare the Cornbread Batter:
In a mixing bowl, combine cornbread mix, milk, egg, and melted butter. Stir until smooth.

Assemble the Casserole:
Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish and spread the beef mixture evenly in the dish. Pour the cornbread batter over the top, spreading it out evenly.

Bake & Serve:
Bake for 20-25 minutes, or until the cornbread is golden brown and cooked through. Let cool slightly before serving.
