
Butterscotch Pie

1 cup packed light brown sugar
4 tbsp cornstarch
½ tsp salt
2 cups milk
2 egg yolks, beaten
1 tbsp butter
1 tsp vanilla extract
1 (9-inch) pie crust, baked
Directions
In the top of a double boiler, combine brown sugar, cornstarch, salt, and milk. Cook over medium heat, stirring constantly, until the mixture begins to thicken, about 20 minutes.
Gradually whisk in the egg yolks and continue cooking, stirring until the filling is thick and creamy.
While the filling cooks, preheat your oven to 400°F (200°C).
Once thickened, remove the mixture from the heat. Stir in butter and vanilla until fully incorporated.
Pour the butterscotch filling into the prepared pie crust.
Bake in the preheated oven for about 5 minutes, or until the top begins to brown.
