
Zesty Lemon Cookie Sandwiches with Creamy Lemon Curd

Ingredients
For the Cookies:
2¾ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
1 cup unsalted butter, softened
1¼ cups granulated sugar
1 large egg
1 teaspoon pure vanilla extract
For the Lemon Curd Filling:
6 tablespoons unsalted butter, softened
1 cup granulated sugar
2 whole eggs + 2 egg yolks
⅔ cup freshly squeezed lemon juice
For the Topping:
Zest of 1 lemon
2 tablespoons powdered sugar (for dusting)
Directions
Prepare the Cookies:
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper and set aside.
In a medium bowl, whisk together the flour, baking soda, and baking powder. Set aside.
In a large mixing bowl, cream the softened butter and sugar until light and fluffy. Add the egg and vanilla extract, mixing until fully combined.
Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
Roll the dough into 1-inch balls and place them on the prepared baking sheets, spacing them about 2 inches apart. Gently flatten each ball with the back of a spoon.
Bake for 10–12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Make the Lemon Curd Filling:
In a medium saucepan over low heat, whisk together the softened butter, sugar, eggs, egg yolks, and lemon juice.
Cook the mixture, stirring constantly, until it thickens and coats the back of a spoon (about 8–10 minutes). Be careful not to let it boil.
Remove the curd from the heat and strain it through a fine-mesh sieve into a bowl to ensure a smooth texture. Let it cool completely.
Assemble the Cookie Sandwiches:
Once the cookies and lemon curd are completely cooled, spread a generous layer of lemon curd onto the flat side of one cookie.
Top with another cookie to create a sandwich. Repeat with the remaining cookies.
Garnish and Serve:
Sprinkle the assembled cookie sandwiches with fresh lemon zest and a light dusting of powdered sugar.
Serve immediately or store in an airtight container in the refrigerator for up to 3 days.
